Carrot Cake in Multi Cooker

Hello Every one, its been long i haven’t posted any of my recipes since i was very busy with other things. Recently i was at Electronic Appliance store, Midea in Burjaman mall, Dubai, and i loved a multi cooker for my kitchen and tried my hands making Carrot cake. It is very simple to use and the cake came out so delicious.

Here is my recipe

For Cake:

Self rising flour – 2 Cups

Carrot – 1 Cup (Grated)

Cinnamon Powder – 1 Tablespoon

Oil – 1 Cup

Fine Sugar – 1 – 1/2 Cup

Eggs – 3 (Beaten)

Chopped Walnuts – 1/2 Cup

Vanilla Essence – 1 Teaspoon

For Cream Cheese Frosting

Cream Cheese – 1 Cup (Room temperature)

Fine Sugar – 1 Cup

Vanilla Essence – 1 Teaspoon

Butter – 1/4 Cup

In a bowl add self rising flour, grated carrot, fine sugar, cinnamon powder, vanilla essence and oil, mix well, now add beaten eggs and chopped walnut, mix with gentle hands and transfer in the multi cooker container and let it cook for at least 45 minutes to 1 hour (depends on the cooker type), once done check by inserting a knife, if it comes out clear means its cooked.

For the cream cheese, add cream cheese, butter, sugar and vanilla essence, make sure all the ingredients and process is done in room temperature. Once done cut the cake in three or two layers, spread the frosting, all over. Enjoy.
