Red Thai Curry With Vegetables

After long vacation when i am back in my kitchen now, i want to start with some Thai food to add in my recipe list.

IMG_5423Red Thai curry is a very known and popular Thai food. It has many different ingredients and many flavors, it is real easy to make too. here is the recipe

Serves – 2 Portions

For Curry Paste

Red Chilies – 10

Lemon Grass – 2 Stems

Coriander Seeds – 2 Tablespoon

Cumin Seeds – 2 Tablespoons

Galangal or Ginger – 2 Inch

Shallots – 2

Garlic – 4 Cloves

Lime Zest – Half Tablespoon

Hot Paprika – 1 Tablespoon

Salt – to taste

For Curry

Chopped Mix Vegetables – 1 Cup

Coconut Milk – 1 Cup

Coconut or vegetables oil – 2 Tablespoons

Basil Leaves – 2 Tablespoons (Chopped)

Method

First start with making curry paste, add red chilies, lemon grass, coriander seeds, cumin seeds, galangal, shallots, lemon zest, paprika, garlic and salt in a mixer grinder, make smooth paste by adding little water, keep aside.

Now slightly boil all chopped mix vegetables and keep stock aside to add in the curry. Heat pan and add oil in it, add chopped vegetables and Thai curry paste. Mix well , add coconut milk and vegetable stock, let it boil, add basil leaves in the end.

Serve with jasmine rice or steamed rice.
