Salads are colorful and healthy option to satisfy your hunger. I like to try new dressings, but my favorite is lemon, olive oil dressing.
Corn and bean salad is very much Mexican style salad. It is colorful and very healthy salad, and also one of my favorite, this is how it is made.
Serves – 2 Portions
Sweet Corn – Half Cup
Red Beans – Half Cup
Tomato – 1 Medium (Chopped)
Onion – 1 Medium (Chopped)
Bell Pepper – 1 Medium (Chopped)
Avocado – 2 Tablespoon (Chopped)
Coriander – Chopped
Olive Oil – 2 Tablespoons
Lemon Juice – 1 Tablespoon
Black Pepper – Half Teaspoon
Garlic – 2 to 3 cloves (Minced)
Salt – To Taste
First start with making dressing, mix olive oil, lemon juice, black pepper, minced garlic and salt, mix well, keep aside.
Now in a bowl combine corn, red beans, chopped tomato, onion, bell pepper, avocado and coriander, mix lime dressing again, add it into salad, mix well, serve.
