Mexican Nachos with salsa is favorite of many. It is perfect appetizer for parties and it can also be a perfect evening snack. With cheese it tastes divine.
I love making it on weekend, it is not very difficult to make if you prepare salsa and cheese sauce in advance. All you need to arrange things on plate when serving. lets’ start making it.
Serving – 2 Portions
Ingredients
Nachos – 1 Packet
Red beans – Refrained
Avocado – 1 Ripe
Jalapeno – 2 tablespoons (Chopped)
For Salsa
Tomato – 1 Large Finally chopped
Onion – 1 Medium Finally chopped
Green Chili – 1 Tablespoon (Finally chopped)
Salt – To Taste
Garlic – 1 tablespoon (Minced)
Cumin Powder – 1 Teaspoon
Capsicum – 1 Tablespoon (Chopped)
Lemon Juice – 1 Tablespoon
Coriander Leaves – 1 handful (chopped)
For Cheese Sauce
Butter – 2 Tablespoons
Flour – 1 Tablespoon
Milk – 4 Tablespoons (plus as you need)
Cheddar Cheese – 1 handful
Method
First start making salsa, mix all salsa ingredients chopped tomato, onion, chilies, capsicum, coriander leaves, minced garlic, salt, cumin powder and lemon juice. Mix well, keep aside.
Now for cheese sauce melt butter in a pan, add flour, cook till raw smell is gone, add milk and cheddar cheese (you can use any other cheese), mix well, once done, keep aside.
Now take serving dish spread nachos chips, top it with salsa, now add cheese sauce, top it with beans, chopped avocado and jalapenos, add some more cheese sauce, garnish with coriander leaves serve.
